- 2 chicken thighs, seasoned with salt, pepper, oregano, and garlic powder

- 1/2 cup cooked jasmine rice
- 1 pat of grass-fed butter
Salad
- 1/2 cup chopped tomato
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- Salt and pepper, to taste
Tzatziki
- 2–3 tbsp Greek yogurt
- 1/4 cup grated cucumber, drained
- 1 clove garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp olive oil
- 1 tbsp fresh dill, chopped
Instructions
- Cook the Chicken: Preheat the air fryer to 375°F (190°C). Season the chicken thighs evenly with salt, pepper, oregano, and garlic powder. Place them in the air fryer basket and cook for 16–18 minutes, flipping halfway through to ensure even cooking. Once done, let the chicken rest for a few minutes to retain juices, then slice into strips.
- Prepare the Rice: Cook jasmine rice according to package instructions. Once cooked, stir in a pat of grass-fed butter to add richness and flavor.
- Make the Salad: Chop tomatoes, cucumber, and red onion, then combine in a bowl. Add crumbled feta cheese, drizzle with olive oil and fresh lemon juice, and season with salt and pepper. Toss gently to combine the flavors.
- Prepare the Tzatziki: Grate cucumber and squeeze out excess moisture. In a small bowl, mix Greek yogurt with grated cucumber, minced garlic, lemon juice, olive oil, and chopped fresh dill. Refrigerate for at least 10 minutes to let flavors meld and chill.
- Assemble the Bowl: Start by layering the buttery jasmine rice at the base of a bowl. Top with sliced air-fried chicken thighs, add a generous serving of the tomato-cucumber-feta salad, and finish by spooning 2–3 tablespoons of the chilled homemade tzatziki on top. Serve immediately for best taste.
