Instructions
- Brown the Meat: Heat olive oil in a large pot over medium heat. Add the ground beef and ground pork, cooking until browned. Drain excess fat to keep the soup from being greasy.
- Sauté the Aromatics: Add the chopped onion and minced garlic to the pot and cook for 2 to 3 minutes until they become soft and fragrant.
- Cook the Cabbage: Stir in the chopped cabbage and continue cooking for another 5 minutes, stirring occasionally, allowing the cabbage to soften slightly.
- Add Liquids and Seasonings: Pour in the tomato sauce, crushed tomatoes, and beef broth. Add the uncooked white rice, Worcestershire sauce, dried thyme, paprika, salt, black pepper, and brown sugar if using. Stir the mixture well to combine all ingredients evenly.
- Simmer the Soup: Bring the soup to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 30 to 40 minutes, stirring occasionally, until the rice is tender and the cabbage is soft.
- Adjust and Serve: Taste the soup and adjust seasoning as needed. Serve hot, garnished with chopped fresh parsley for a burst of freshness.
