Steak Bites

Mashed Potatoes

  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • ½ cup milk
  • ¼ cup sour cream
  • Salt and pepper to taste


Instructions

  1. Cook Potatoes: Bring a large pot of salted water to a boil. Add the peeled and cubed Yukon gold potatoes and cook for 15–20 minutes or until fork-tender. Drain and return the potatoes to the pot.
  2. Mash Potatoes: Add butter, milk, sour cream, salt, and pepper to the drained potatoes. Mash until smooth and creamy, then cover to keep warm.
  3. Sear Steak Bites: Meanwhile, heat olive oil in a large skillet over medium-high heat. Pat the steak bites dry with paper towels and season with salt, pepper, and smoked paprika. Add the steak cubes to the skillet in a single layer and sear for 2–3 minutes per side until browned and cooked to your preferred doneness. Remove steak from the skillet and set aside.
  4. Sauté Garlic Butter: In the same skillet, reduce the heat to medium. Add butter and minced garlic, sautéing for 1–2 minutes until fragrant while scraping up any browned bits from the pan.
  5. Toss Steak in Garlic Butter: Return the steak bites to the skillet and toss to coat evenly in the garlic butter.
  6. Add Parmesan and Parsley: Sprinkle the steak bites with grated Parmesan cheese and chopped fresh parsley, mixing lightly to combine and melt the cheese slightly.
