  • 1 large head cauliflower, quartered

Instructions

  1. Heat the oil and garlic: Add the olive oil to a large pot over medium-high heat. When the oil is hot, add the smashed garlic cloves and cook for 1-2 minutes until fragrant, taking care not to burn the garlic.
  2. Cook the cauliflower with broth and herbs: Pour in the chicken broth and add the quartered cauliflower, dried thyme, and dried rosemary to the pot. The broth does not need to fully cover the cauliflower; this method allows the cauliflower to steam as it cooks. Cover the pot with a lid and cook for 15-20 minutes until the cauliflower is tender and easily pierced with a fork.
  3. Blend the mixture: Remove the pot from heat. Using an immersion blender, blend the cooked cauliflower mixture until smooth. Alternatively, transfer the cauliflower to a food processor or blender in batches and pulse until smooth. You can also mash it by hand for a chunkier texture.
  4. Finish with Parmesan and seasoning: Stir in the shredded Parmesan cheese and season with salt to taste. Mix well until the cheese is melted and incorporated. Serve immediately while warm.
