Description

This Garlic Parmesan Crockpot Chicken and Potatoes recipe offers a delicious, hands-off meal combining tender, seasoned chicken breasts with perfectly spiced potatoes. Slow-cooked to perfection and topped with melted mozzarella cheese, it’s an easy and flavorful dish ideal for family dinners or meal prepping.

Ingredients

Scale

Potatoes

  • 5 medium-sized potatoes, cubed
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chicken

  • 1 lb chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to cover the chicken

Topping

  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare Potatoes: Wash and cube the potatoes. Spray the crockpot with cooking spray to prevent sticking. Add the cubed potatoes to the crockpot and drizzle with olive oil. Season with salt, pepper, garlic powder, and paprika, then stir well to evenly coat the potatoes with the seasonings.
  2. Season Chicken: Cube the chicken breasts and place them in a bowl. Season with salt, pepper, paprika, onion powder, and Italian seasoning. Add the minced garlic and mix thoroughly. Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to cover all pieces evenly.
  3. Layer and Cook: Add the seasoned chicken with sauce on top of the potatoes in the crockpot. Cover and cook on low for about 6 hours, or until the potatoes are tender and the chicken is fully cooked through. Stir occasionally if possible to mix the flavors.
  4. Add Cheese: Once cooked, sprinkle the shredded mozzarella cheese over the top of the chicken and potatoes. Cover the crockpot again and let the cheese melt for 5-10 minutes before serving.
  5. Serve: Serve the Garlic Parmesan Chicken and Potatoes hot. For extra flavor, optionally top with ranch dressing before serving.

Notes

  • Spraying the crockpot helps prevent sticking and makes cleanup easier.
  • Stirring occasionally during cooking can help blend flavors but is not mandatory.
  • Can substitute mozzarella with other melty cheeses like provolone or cheddar if desired.
  • Ranch dressing adds a creamy tangy taste but is optional.
  • Adjust seasoning quantities to taste, especially salt and garlic powder.
