Description

This Garlic Parmesan Chicken Meatloaf is a flavorful and moist alternative to traditional beef meatloaf, featuring ground chicken combined with parmesan, mozzarella, and garlic for a rich, cheesy taste. Perfect for a comforting family dinner, it’s baked to perfection and topped with melted mozzarella for an irresistible finish.

Ingredients

Scale

Main Ingredients

  • 1.5 lbs ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare your baking equipment by lining a baking sheet with parchment paper or lightly greasing a loaf pan to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, shredded mozzarella, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and black pepper. Mix gently until all ingredients are just incorporated to keep the meatloaf tender.
  3. Shape and Bake: Shape the meat mixture into a loaf on the prepared baking sheet or press it evenly into the loaf pan. Bake in the preheated oven for 35 to 40 minutes, or until the meatloaf is firm and fully cooked through.
  4. Add Cheese Topping: Remove the meatloaf from the oven and evenly sprinkle extra shredded mozzarella cheese over the top. Return it to the oven and bake for an additional 5 to 7 minutes until the cheese has melted and is bubbly and lightly golden.
  5. Rest and Serve: Allow the meatloaf to rest for 5 minutes after baking. This helps the juices redistribute. Garnish with freshly chopped parsley, then slice and serve with your favorite sides for a delightful meal.

Notes

  • Using ground chicken keeps this meatloaf leaner than traditional beef versions.
  • Be careful not to overmix the meat mixture to avoid a dense texture.
  • You can substitute mozzarella with provolone or cheddar if desired.
  • Resting the meatloaf before slicing ensures it holds together well and remains juicy.
  • For a crispier crust, use a loaf pan instead of a baking sheet.
