Description

Garlic Parmesan Chicken and Potatoes is a simple, flavorful baked dish featuring tender boneless chicken breasts coated in a savory garlic Parmesan mixture paired with crispy roasted potatoes. This easy-to-make meal is perfect for weeknight dinners and delivers a delicious blend of herbs, garlic, and cheese.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Potatoes

  • 4 medium potatoes, chopped into 1-inch pieces

Garlic Parmesan Mixture

  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C). Lightly grease a large baking sheet or dish with cooking spray or olive oil to prevent sticking.
  2. Prepare Garlic Parmesan Mixture: In a small bowl, thoroughly mix together the olive oil, minced garlic, grated Parmesan cheese, dried oregano, dried thyme, paprika, salt, and pepper to create a flavorful coating.
  3. Coat Chicken and Potatoes: Rub half of the garlic Parmesan mixture evenly over both sides of the chicken breasts. Toss the chopped potatoes with the remaining half of the mixture, ensuring each piece is well coated.
  4. Arrange on Baking Sheet: Spread the chicken breasts and coated potatoes out in a single layer on the prepared baking sheet, ensuring even spacing for proper cooking.
  5. Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked through (reaches an internal temperature of 165°F) and the potatoes are tender and crispy around the edges.
  6. Garnish and Serve: Remove from oven, sprinkle chopped fresh parsley over the chicken and potatoes for a burst of color and fresh flavor. Serve hot.

Notes

  • You can use baby potatoes or Yukon Gold for a different texture.
  • For extra crispiness, broil the dish for 2-3 minutes at the end of baking, watching carefully to prevent burning.
  • Leftovers can be refrigerated up to 3 days and reheated in the oven to maintain crispiness.
  • Ensure chicken breasts are of even thickness for uniform cooking, or pound them slightly if needed.
