Description

Chicken Marinade

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch

Vegetables & Stir-Fry

  • 3 tbsp vegetable oil, divided
  • 4 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup low-sodium chicken broth or water
  • Salt and black pepper to taste

To Serve

  • 2 cups cooked white rice
  • Sliced green onions (optional garnish)
  • Sesame seeds (optional garnish)


Instructions

  1. Marinate the chicken: In a bowl, combine thinly sliced chicken breast with soy sauce, oyster sauce, hoisin sauce, and cornstarch. Toss well to coat evenly and let it marinate for 10 to 15 minutes to absorb the flavors.
  2. Cook the chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer and sear for 2–3 minutes on each side until the pieces are golden and cooked through. Remove the chicken from the pan and set aside.
  3. Sauté garlic and peppers: In the same pan, add the remaining tablespoon of oil. Sauté the minced garlic for about 30 seconds, releasing its fragrance without burning. Add the sliced red, yellow, and green bell peppers and stir-fry for 3 to 4 minutes until they are just tender but still crisp.
  4. Combine and finish: Return the cooked chicken to the pan with the peppers. Pour in the low-sodium chicken broth or water and stir everything together for 1 to 2 minutes until the mixture is heated through and the sauce slightly thickens. Season with salt and black pepper to taste.
  5. Serve: Serve the garlic chicken stir-fry hot over a bed of steamed white rice. Garnish with sliced green onions and sesame seeds if desired for extra color and texture.

  • For extra flavor, add a splash of rice vinegar or a few drops of sesame oil just before serving.
  • You can substitute chicken thighs for a juicier alternative or use tofu for a vegetarian variation.
