Mashed Potatoes
- 2 lbs russet or Yukon Gold potatoes
- 1/2 cup heavy cream or milk, warmed
- 3 tbsp unsalted butter
- Salt, to taste
- Freshly ground black pepper, to taste

- Fresh parsley, chopped
Instructions
- Prepare the Potatoes: Peel and quarter the potatoes. Place them in a pot of salted cold water, bring to a boil, and cook for 15-20 minutes until fork-tender. Drain thoroughly and let them steam dry to avoid watery mashed potatoes.
- Cook the Beef Bites: While the potatoes cook, heat a skillet over medium-high heat and melt the butter. Add the minced garlic and sauté until fragrant but not browned. Add the beef cubes, season with salt and freshly ground black pepper, and cook for 3-5 minutes, turning to brown all sides while keeping the inside juicy.
- Mash the Potatoes: Return the drained potatoes to the pot or a bowl and mash until smooth. Gradually add the warm cream or milk along with butter, continuing to mash until the potatoes are creamy, silky, and fluffy. Season with salt and pepper to your liking.
- Plate and Garnish: Spoon a generous portion of mashed potatoes onto plates, top with garlic butter beef bites, and garnish with freshly chopped parsley to add a burst of color and freshness.
