Description

  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup rainbow sprinkles, plus extra for topping


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together melted butter and brown sugar until smooth. Add egg, vanilla extract, and almond extract (if using), and mix until well combined.
  3. Add Dry Ingredients: Stir in flour, baking powder, and salt until just incorporated. Gently fold in white chocolate chips and rainbow sprinkles.
  4. Bake: Spread the batter evenly in the prepared pan and top with extra sprinkles if desired. Bake for 22–25 minutes or until the edges are golden and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  5. Cool and Serve: Allow to cool completely in the pan before slicing into squares.

Notes

  • Use jimmies-style sprinkles for best results—they won’t bleed color into the batter.
  • For a richer flavor, brown the butter before mixing.
