Description

A refreshing and vibrant fruit salad featuring a colorful mix of fresh strawberries, grapes, clementines, blueberries, apples, and banana, all coated in a sweet and tangy orange poppy seed syrup. This easy no-cook recipe is perfect for a healthy snack or a light dessert.

  • 2 lbs fresh strawberries, hulled and halved or quartered if large
  • 1 lb fresh grapes, any color, halved
  • 6 clementines, peeled and separated into sections
  • 1 cup fresh blueberries
  • 1 to 2 apples, cored, cut into sixths and sliced into 1/4″ thick pieces
  • 1 banana, sliced

Orange Poppy Seed Syrup

  • 4 Tbsp liquid honey
  • Juice of 1 large lemon (about 1/4 cup)
  • Juice of 1 medium orange (about 1/4 cup)
  • Heaping 1/2 tsp poppy seeds
  • Mint leaves, for garnish


Instructions

  1. Prepare the syrup: Squeeze the juice of 1 lemon and 1 orange into a bowl. Stir in 4 tablespoons of liquid honey and 1/2 teaspoon of poppy seeds, mixing until the honey is completely dissolved into the syrup.
  2. Prepare the fruit: Rinse all fruit thoroughly. Slice the strawberries, grapes, clementines, blueberries, apples (cored and cut into sixths, then sliced into 1/4″ thick pieces), and slice the banana, but add the apples and banana only when ready to mix with syrup to prevent browning.
  3. Toss with syrup: Drizzle the prepared orange poppy seed syrup over the mixed fruit and gently toss to evenly coat all the fruit pieces with the syrup.
  4. Garnish and serve: Garnish with fresh mint leaves as desired and serve immediately, or chill briefly for a refreshing treat.

Notes

  • To prevent apples and bananas from browning, only slice them right before adding the syrup as the lemon juice in the syrup acts as a natural preservative.
  • Feel free to use any seasonal fresh fruit to customize this salad.
  • For extra crunch, consider adding chopped nuts like walnuts or almonds.
  • This salad is best enjoyed fresh but can be refrigerated for up to 4 hours.
