Ingredients
Scale
Banana Bar Mixture
- 3 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1/2 cup natural peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
Topping
- Extra dark chocolate chips (optional)
- 1 tablespoon coconut oil
Instructions
- Prepare the Pan: Line an 8×8-inch baking dish with parchment paper to prevent sticking and make removal easier once the bars are frozen.
- Mix Ingredients: In a large bowl, thoroughly combine the mashed bananas, rolled oats, natural peanut butter, honey or maple syrup, vanilla extract, and salt. Ensure the mixture is well blended for uniform texture.
- Add Chocolate Chips: Stir in 1/2 cup of dark chocolate chips evenly throughout the banana mixture to add bursts of chocolate flavor in every bite.
- Press Mixture into Pan: Spread the combined ingredients evenly into the prepared baking dish, smoothing the top with a spatula or the back of a spoon for an even layer.
- Melt Chocolate Topping: In a microwave-safe bowl, melt the remaining chocolate chips together with coconut oil in 30-second intervals, stirring thoroughly after each interval until smooth and glossy.
- Top Bars: Drizzle or spread the melted chocolate evenly over the top of the pressed banana mixture for a rich, chocolate finish.
- Freeze: Place the pan in the freezer for at least 2 hours or until the bars are firm enough to cut.
- Slice and Serve: Once frozen solid, remove the bars from the pan by lifting the parchment paper, then cut into 9 equal bars. Keep stored in the freezer until ready to enjoy.
Notes
- Add chopped nuts or shredded coconut to the mixture for extra texture and flavor.
- Substitute almond or cashew butter for peanut butter to vary the taste or accommodate allergies.
- Use honey or maple syrup according to dietary preference or availability.
- For a vegan option, choose maple syrup instead of honey and ensure chocolate chips are dairy-free.
