Ingredients
Scale
Main Ingredients:
- 6 cups cubed day-old bread (such as brioche or French bread)
- 4 large eggs
- 1 1/4 cups milk
- 1/4 cup heavy cream
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons melted butter
Optional Topping:
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons cold butter
- 1/4 cup chopped pecans or walnuts
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
- Prepare the custard: In a large mixing bowl, whisk together the eggs, milk, cream, maple syrup, brown sugar, vanilla, cinnamon, nutmeg, and salt. Add the cubed bread and gently stir to coat. Let sit for 10 minutes to allow the bread to soak up the custard.
- Make the topping: While the bread is soaking, prepare the topping by mixing brown sugar, cinnamon, and cold butter with a fork until crumbly. Stir in the nuts if using.
- Assemble the muffins: Divide the soaked bread mixture evenly among the muffin cups, pressing lightly to compact. Sprinkle the topping over each muffin.
- Bake: Bake for 25–30 minutes or until golden and set in the center. Let cool in the pan for 5 minutes before removing.
- Serve: Serve warm with extra maple syrup if desired.
Notes
- These muffins are perfect for make-ahead breakfasts and freeze well.
- Use stale bread for best results, and feel free to mix in diced apples, raisins, or chocolate chips for variation.
