For the Bean Sauce

For the Enfrijoladas
- 8 corn tortillas
- oil for softening tortillas
- 1/2 cup crumbled queso fresco
- 1/2 cup Mexican crema or sour cream
- 1/4 cup chopped fresh cilantro
- 1/2 cup finely chopped white onion (for topping)
Instructions
- Prepare the Bean Sauce: In a blender, combine the cooked beans, vegetable broth, garlic, 1/4 of the white onion, cumin, and salt. Blend the mixture until completely smooth, then pour it into a saucepan. Heat over medium heat, stirring occasionally, until the sauce is warmed through and slightly thickened, about 5 minutes.
- Softening the Tortillas: Heat a small amount of oil in a skillet over medium heat. Lightly fry each corn tortilla for a few seconds on each side until they become pliable but not crispy. Remove each tortilla and set aside on a plate.
- Assemble the Enfrijoladas: Dip each softened tortilla into the warm bean sauce, ensuring it is thoroughly coated. Fill or fold the coated tortillas as preferred and place them onto serving plates. Repeat the process with all tortillas.
- Add Toppings: Drizzle additional bean sauce over the assembled enfrijoladas. Sprinkle with crumbled queso fresco, dollops of Mexican crema or sour cream, chopped fresh cilantro, and the finely chopped white onion for a fresh finish.
- Serve: Serve the enfrijoladas warm as a comforting and satisfying main dish.
