- 2 tablespoons vegan feta or cashew cheese crumbles
Seasoned Mayo Mixture
- 1/4 cup vegan mayonnaise
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the flatbread to a crispy finish.
- Prepare Flatbread: Place the flatbread on a baking sheet and brush it lightly with olive oil to ensure a golden crust.
- Char the Corn: Heat a skillet over medium-high heat and add the corn kernels. Cook for 3–4 minutes, stirring occasionally, until the corn is slightly browned and charred, enhancing its natural sweetness and adding smoky flavor.
- Mix Seasoned Mayo: In a small bowl, combine vegan mayonnaise, lime juice, chili powder, smoked paprika, garlic powder, and salt. Stir thoroughly to create a creamy, flavorful spread.
- Assemble Flatbread: Spread the seasoned mayo mixture evenly over the oiled flatbread, then top with the charred corn, finely chopped red onion, vegan feta or cashew cheese crumbles, and sprinkle fresh cilantro on top.
- Bake: Place the assembled flatbread in the preheated oven and bake for 8–10 minutes, or until the edges are crispy and the toppings are warmed through.
- Serve: Slice the flatbread and serve warm. Accompany with lime wedges for an extra burst of tangy flavor if desired.
