Instructions
- Rinse the rice: Rinse 1 cup of rice under cold water until the water runs clear to remove excess starch, then drain.
- Heat the oil: In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.
- Add spices and aromatics: Add 1/2 teaspoon turmeric powder, 1/2 teaspoon garlic powder, and 2 bay leaves to the oil and sauté for about 30 seconds until fragrant.
- Add rice: Stir in the rinsed rice, coating it well with the spiced oil mixture to toast lightly for 1-2 minutes.
- Add liquids and salt: Pour in 1/2 cup canned coconut milk and 1/2 cup chicken or vegetable broth, then add 1/2 teaspoon salt (adjust to taste). Stir gently to combine.
- Cook the rice: Bring the mixture to a boil, then reduce heat to low, cover tightly with a lid, and simmer for 18-20 minutes or until the rice is tender and all liquid is absorbed.
