For the Lemon Mousse:
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 4 large egg yolks
- 1/8 teaspoon salt
For Garnish:
- Optional whipped cream
- Lemon zest
Instructions
- In a medium saucepan, whisk together the egg yolks, sugar, lemon juice, lemon zest, and salt.
- Remove from heat and strain through a fine mesh sieve into a bowl to remove any cooked egg bits.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 7–10 minutes.
Let cool to room temperature, then refrigerate for 30 minutes until chilled.
Gently fold the whipped cream into the chilled lemon mixture until smooth and fully combined.
Serve chilled, topped with whipped cream and lemon zest if desired.
Notes
- For a more intense lemon flavor, add an extra teaspoon of lemon zest.
- You can prepare the mousse a day ahead for easier entertaining.
