Instructions
- Preheat and Prepare Egg Mixture: Preheat your oven to 400°F (204°C). In a bowl, whisk together the eggs, heavy whipping cream, and salt until the mixture is smooth and even. Set aside.
- Prepare the Skillet and Vegetables: Melt the butter in a cast-iron skillet or a suitable baking dish, ensuring to coat the sides evenly. Spread the diced bell peppers, halved cherry tomatoes, and arugula evenly across the bottom of the pan.
- Combine and Bake: Pour the whisked egg mixture over the vegetables in the skillet. Sprinkle the shredded mozzarella and optional goat cheese evenly on top. Use a fork to gently distribute the cheese through the eggs. Place the skillet in the oven and bake for 15 to 17 minutes, until the frittata is set in the center and the edges, and the top is golden brown. Check that the internal temperature reaches 160°F (71°C) to ensure it’s fully cooked.
