Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish using nonstick spray or butter to ensure the casserole doesn’t stick.
  2. Cook Grits: In a medium saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil. Slowly whisk in the 1 cup of quick-cooking grits, then reduce heat to low. Cook, stirring often, for 5–7 minutes until thickened and creamy.
  3. Add Seasonings and Dairy: Stir in 1/2 teaspoon garlic powder, 1/2 teaspoon black pepper, 1/4 teaspoon cayenne pepper (if using), 1/2 cup whole milk, 1/2 cup heavy cream, 1 tablespoon butter, and 1 cup of shredded sharp cheddar cheese. Mix until the cheese melts and the mixture is smooth.
  4. Incorporate Eggs and Shrimp: Remove the grits from heat and let them cool slightly. Then stir in the lightly beaten eggs. Fold in the chopped shrimp, sliced green onions, and optional cooked bacon or sausage gently to combine evenly.
