Ingredients
Scale
Dry Ingredients
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
Wet Ingredients
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line them with parchment paper to prevent sticking.
- Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt until well blended.
- Add Wet Ingredients: Add the eggs, whole milk, vegetable oil, and vanilla extract into the dry mixture. Mix thoroughly until the batter is smooth and well combined.
- Incorporate Boiling Water: Carefully stir in the boiling water; the batter will be thin, which is expected. This step helps to make the cake moist and tender.
- Pour and Bake: Divide the batter evenly between the prepared pans. Place them in the oven and bake for 30–35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Cool: Allow the cakes to cool in their pans for 10 minutes. Then, remove them from the pans and transfer to a wire rack to cool completely before frosting or serving.
Notes
- This cake pairs perfectly with chocolate buttercream, cream cheese frosting, or a simple dusting of powdered sugar.
- For cupcakes, bake for 18–22 minutes instead of the full 30–35 minutes.
