These Easter Egg Rice Krispie Treats are a fun and colorful twist on the classic recipe, perfect for spring celebrations. Made with marshmallows, Rice Krispies cereal, and pastel food coloring, these treats are easy to make and great for Easter parties or as festive treats.

- 3 tablespoons unsalted butter
- 1 package (10 oz) mini marshmallows
- 6 cups Rice Krispies cereal
- 1/2 teaspoon vanilla extract
- pastel food coloring (pink, yellow, green, blue)
- nonstick cooking spray
- candy-coated chocolate eggs or jelly beans (optional, for decoration)
Instructions
- In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir until completely melted and smooth.
- Stir in the vanilla extract. Divide the melted marshmallow mixture evenly into four bowls and tint each with a different pastel food coloring.
- Quickly stir 1 1/2 cups of Rice Krispies cereal into each bowl and mix until well coated. Spray your hands lightly with nonstick spray and form each color mixture into egg shapes, about the size of real eggs.
- If desired, press a small candy egg or jelly bean into the center of each treat. Place the finished eggs on a parchment-lined baking sheet and allow them to set at room temperature for 30 minutes.
Notes
- You can shape the eggs using plastic fillable Easter eggs as molds for a more uniform shape.
- Wrap individually in plastic wrap for party favors or Easter baskets.
