  • 12 large eggs
  • 1/3 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

  • 1 small carrot (for beaks and feet)
  • 6 whole black olives (for eyes)
  • Optional fresh herbs for garnish


Instructions

  1. Boil Eggs: Place the eggs in a large saucepan and cover with cold water. Bring to a boil over medium-high heat, then remove from heat, cover, and let sit for 10–12 minutes to cook through.
  2. Cool and Peel: Transfer the eggs to a bowl of ice water and let cool completely. Once cooled, gently peel the eggs to avoid damaging the white.
  3. Prepare Eggs for Filling: Using a sharp knife, carefully cut the top third off each egg and set these tops aside. Scoop out the yolks from the bottom portions into a mixing bowl.
  4. Make Filling: Mash the yolks with mayonnaise, yellow mustard, white vinegar, salt, and black pepper until smooth and creamy to create the deviled egg filling.
  5. Fill Eggs: Spoon or pipe the yolk mixture back into the bottom halves of the eggs, filling them generously and evenly.
  6. Assemble Chicks: Place the reserved top pieces of the eggs back on the filled bottoms at a slight angle to simulate a cracked shell.
  7. Add Features: Cut small triangles from the carrot to create beaks and small circles or slivers for feet. Use pieces of black olive for eyes. Gently press these into the yolk filling to decorate your chicks.
  8. Chill and Serve: Refrigerate the assembled deviled egg chicks until served, ensuring they are nicely chilled and fresh.
