Instructions
- Thaw vegetables: Let the frozen cauliflower rice and green peas thaw at room temperature for 10 minutes before using to ensure even cooking.
- Sauté aromatics: Heat 2 tablespoons of olive oil in a medium-large skillet over medium heat. Add the finely chopped red bell pepper and sweet onion, sautéing for 4-5 minutes until they soften and become fragrant.
- Add garlic: Stir in the crushed garlic cloves and sauté for an additional 1-2 minutes, or until the garlic begins to brown slightly, releasing its flavor.
- Prepare spice mix: In a small bowl, combine the curry powder, ground turmeric, ground coriander, and salt. Mix well to blend the spices evenly.
- Cook cauliflower rice: Add the remaining 1 tablespoon of olive oil, thawed cauliflower rice, thawed green peas, and the prepared spice mixture to the skillet. Cook over medium heat for 5-7 minutes, stirring occasionally, until the cauliflower rice reaches your preferred tenderness.
