Description

  • 14 oz can Rotel, undrained

Liquids and Broth

  • 2 cups beef broth

Spices and Seasonings

  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Garnish

  • 2 teaspoons freshly chopped parsley


Instructions

  1. Cook the Ground Beef: In a large skillet over medium-high heat, cook and crumble the ground beef until browned and fully cooked. Add the diced onions and minced garlic to the skillet and sauté for an additional 2 minutes to develop flavor, then remove from heat.
  2. Combine Ingredients in Slow Cooker: Transfer the cooked beef and onion mixture to the bottom of a 6-quart or larger slow cooker. Add sliced kielbasa sausage, diced potatoes, rinsed pinto beans, drained whole kernel corn, undrained diced tomatoes, undrained Rotel, frozen mixed vegetables, beef broth, brown sugar, smoked paprika, onion powder, kosher salt, and ground black pepper.
  3. Slow Cook the Stew: Cover the slow cooker with its lid and cook on high for 3 to 4 hours or on low for 6 to 8 hours. The stew is ready when the vegetables are tender and all flavors are well blended.
