  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)

Sauce

  • 1/3 cup chicken broth
  • 1.5 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • 1/4 teaspoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1 tiny pinch cayenne pepper (optional)
  • 1 cup heavy/whipping cream


Instructions

  1. Prepare the chicken: Slice each chicken breast in half lengthwise to create 4 thinner cutlets. Season both sides of each cutlet with garlic powder, salt, and pepper evenly.
  2. Heat the pan: In a skillet over medium-high heat, warm the olive oil and 1 tablespoon of butter until hot but not smoking.
  3. Cook the chicken: Place the chicken cutlets in the hot pan and cook for 4 to 5 minutes on each side until they develop a golden-brown color. Remove the chicken from the pan and set aside on a plate.
  4. Make the sauce: Remove the pan from the heat. Add the remaining 2 tablespoons of butter, chicken broth, Dijon mustard, maple syrup, lemon juice, Italian seasoning, and cayenne pepper if using. Whisk the ingredients together until the sauce is smooth, ensuring not to reduce the liquid entirely.
  5. Add the cream and simmer: Stir in the heavy cream and return the pan to medium-high heat. Once the sauce begins bubbling, return the chicken cutlets to the pan. Reduce the heat to low and simmer the chicken in the sauce for about 5 minutes or until the chicken is fully cooked and the sauce thickens to your preferred consistency. Adjust seasoning with salt and pepper if needed.
