Instructions

  1. Heat oil: Heat two tablespoons of olive oil in a large pot over medium heat.
  2. Sauté onion: Add one medium diced onion to the pot and sauté for about 5 minutes until soft and translucent.
  3. Add garlic: Add two cloves of minced garlic and cook for 1-2 minutes, stirring frequently to prevent burning.
  4. Add liquids: Pour in four cups of chicken broth and one cup of water, stirring to combine.
  5. Season soup: Add one teaspoon dried thyme, one teaspoon dried parsley, half a teaspoon salt, and a quarter teaspoon black pepper to the pot.
  6. Mix ingredients: Stir thoroughly to distribute spices evenly.
  7. Add vegetables: Add sliced carrots and celery stalks and stir again.
  8. Simmer vegetables: Bring to a boil, then reduce heat to low and simmer for about 10 minutes until vegetables are tender.
