Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, chicken broth, and cornstarch until smooth to create the stir fry sauce. Set aside.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breasts and cook for 4-5 minutes until browned and fully cooked. Remove the chicken from the pan and set aside.
  3. Sauté Aromatics: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant but not burnt.
  4. Cook Vegetables: Add the sliced zucchinis and red bell pepper to the pan. Stir fry the vegetables for 3-4 minutes until they are just tender but still crisp.
  5. Combine and Thicken Sauce: Return the cooked chicken to the pan with vegetables. Pour the prepared sauce over the contents and toss everything to coat evenly. Continue cooking for 1-2 minutes until the sauce thickens and glazes the chicken and vegetables.
