Description

This classic Chicken Fried Rice recipe is a quick and flavorful meal that combines tender diced chicken, scrambled eggs, and mixed vegetables with fragrant jasmine rice, all stir-fried together with soy sauce, oyster sauce, and sesame oil. Perfect for using leftover rice, this dish is a delicious and satisfying option for a weeknight dinner.

Ingredients

Scale

Main Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the oil: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat to prepare for cooking the chicken.
  2. Cook the chicken: Add the diced chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
  3. Scramble the eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs and set aside with the chicken.
  4. Sauté garlic: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, enhancing the flavor of the dish.
  5. Cook vegetables: Add the frozen peas and carrots to the skillet and stir-fry for about 2 minutes until they are heated through.
  6. Add rice: Add the day-old cooked jasmine rice to the skillet, breaking up any clumps with a spatula or wooden spoon. Stir-fry for an additional 2 minutes to heat the rice properly.
  7. Combine chicken and eggs: Return the cooked chicken and scrambled eggs to the skillet, mixing everything well to incorporate all the ingredients.
  8. Add sauces: Stir in the soy sauce, oyster sauce, and sesame oil, ensuring all the ingredients are evenly coated. Continue stir-frying for another 2-3 minutes to blend the flavors.
  9. Add green onions and season: Add the sliced green onions and season with salt and pepper to taste. Stir everything together until well combined.
  10. Serve: Remove the skillet from heat and serve the chicken fried rice immediately while hot and fresh.

Notes

  • Using day-old rice helps prevent the fried rice from becoming mushy.
  • Adjust soy sauce and oyster sauce quantities to taste or dietary preferences.
  • You can substitute frozen peas and carrots with fresh vegetables if preferred, but cooking times may vary.
  • For extra flavor, consider adding a splash of toasted sesame oil at the end.
  • Feel free to add other vegetables or proteins to customize the dish.
