Description

A comforting and hearty Chicken Cobbler recipe that combines tender shredded chicken, mixed vegetables, and a savory cheddar biscuit topping. This easy-to-make casserole is a perfect family meal for any day of the week.

Ingredients

Scale

For the Filling:

  • 2 cups cooked shredded chicken
  • 1 cup frozen mixed vegetables
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted (1 stick)
  • 1 teaspoon baking powder

For the Sauce:

  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup chicken broth

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Layer the Filling: Spread shredded chicken in the baking dish, top with mixed vegetables, diced onion, and season with garlic powder, thyme, salt, and pepper. Sprinkle cheddar cheese over the top.
  3. Prepare the Biscuit Topping: In a bowl, mix flour, milk, and baking powder until smooth. Pour over the chicken and vegetables without stirring.
  4. Make the Sauce: Combine melted butter, cream of chicken soup, and chicken broth. Gently pour over the flour layer without stirring.
  5. Bake: Bake uncovered for 45–50 minutes until the top is golden. Let it rest for 5–10 minutes before serving.

Notes

  • Rotisserie chicken works well for this recipe.
  • Enhance the flavor with fresh parsley or a splash of hot sauce.
  • Best served warm and can be reheated the next day.
