Ingredients
Scale
Cherry Filling
- 4 cups fresh or frozen pitted cherries
- 3/4 cup granulated sugar (divided)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Cobbler Topping
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter (cold and cubed)
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cherry Filling: Preheat your oven to 375°F (190°C). In a medium saucepan over medium heat, combine the cherries, 1/2 cup of the sugar, lemon juice, and cornstarch. Stir frequently and cook for 5–7 minutes until the mixture begins to bubble and slightly thickens, creating a luscious filling.
- Assemble the Filling: Pour the cooked cherry mixture into a greased 8×8-inch baking dish, spreading it out evenly.
- Mix the Cobbler Batter: In a medium bowl, whisk together the flour, remaining 1/4 cup sugar, baking powder, and salt. Cut in the cold, cubed butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the milk and vanilla extract just until combined to form a thick batter.
- Add Topping: Drop spoonfuls of the batter over the cherry filling in the baking dish. Leave some gaps between spoonfuls so the cherry filling can peek through during baking.
- Bake: Place the baking dish in the preheated oven and bake for 30–35 minutes or until the top is golden brown and the batter is cooked through.
- Serve: Allow the cobbler to cool slightly before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream.
Notes
- Serve warm with vanilla ice cream or whipped cream for a classic treat.
- If using frozen cherries, no need to thaw; simply increase the cooking time in the saucepan by a few extra minutes to reach the desired thickness.
- For a twist, try substituting part of the cherries with mixed berries to vary the flavor.
