Description

Deliciously cheesy and saucy Chicken Parmesan Sloppy Joes made with ground chicken simmered in marinara sauce, seasoned with Italian herbs, and topped with melted Parmesan and mozzarella cheeses served on toasted sandwich buns.

Chicken Mixture

  • 1 lb ground chicken

  • 1½ cups marinara or pasta sauce
  • ½ cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese (divided)

Sandwiches

  • 4 sandwich buns or brioche rolls
  • Chopped parsley or fresh basil for garnish


Instructions

  1. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3–4 minutes, until soft and fragrant.
  2. Cook Chicken: Add ground chicken. Cook for 5–7 minutes, breaking it up with a spoon, until fully cooked and no longer pink.
  3. Season and Sauce: Stir in garlic powder, salt, black pepper, and Italian seasoning. Add marinara sauce and simmer on low for 5–7 minutes.
  4. Add Cheeses: Stir in Parmesan and half of the mozzarella. Cook 2 more minutes until melted and well combined.
  5. Toast Buns: While the sauce simmers, toast buns in a 350°F (175°C) oven for 5–6 minutes until lightly crisp.
  6. Assemble Sandwiches: Spoon the chicken mixture onto buns. Top with remaining mozzarella and broil for 1–2 minutes until bubbly.
