These Cheesy Potato Burritos are the ultimate comfort meal, packed with flavorful ingredients like roasted potatoes, black beans, corn, and cheddar cheese, all wrapped in a warm flour tortilla. Customize with your favorite toppings for a satisfying and easy-to-make dinner.

Ingredients

Scale

Potato Filling:

  • 2 large russet potatoes (peeled and diced)
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste

Additional Ingredients:

  • 1 tbsp butter
  • ½ cup diced onion
  • 1 cup canned black beans (rinsed and drained)
  • 1 cup corn kernels (frozen or canned)
  • 1 ½ cups shredded cheddar cheese
  • 6 large flour tortillas
  • ¼ cup sour cream (optional)
  • ¼ cup salsa or hot sauce (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Roast Potatoes: Toss the diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Roast for 25–30 minutes until golden and tender, flipping halfway through.
  3. Prepare Filling: Sauté onion in butter until soft. Add black beans, corn, and roasted potatoes. Mix gently.
  4. Assemble Burritos: Warm tortillas, spoon filling, add cheddar cheese, and roll into burritos.
  5. Serve: Serve warm with optional toppings like sour cream, salsa, or cilantro.

Notes

  • You can add scrambled eggs or cooked sausage for a breakfast twist.
  • To make it vegan, use dairy-free cheese and skip the sour cream.
  • Burritos can be wrapped in foil and frozen for quick reheating later.
