- 1 (10 oz) can red enchilada sauce
- 1/2 cup salsa (mild or medium)
For the Tortellini:
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup shredded Mexican cheese blend
- 2 tablespoons chopped fresh cilantro (optional)
- Sour cream, for serving (optional)
Instructions
- Cook the Beef Mixture: In a large skillet over medium heat, cook the ground beef with onion and garlic until browned, about 7–8 minutes. Drain any excess fat. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Add the enchilada sauce and salsa, and simmer.
- Cook the Tortellini: Cook the tortellini according to package directions, then drain. Add it to the skillet with the beef mixture and stir to combine.
- Finish and Serve: Sprinkle shredded cheese over the top, cover, and cook on low until the cheese melts. Garnish with cilantro and serve with sour cream if desired.
Notes
- You can substitute ground turkey or shredded chicken for the beef.
- For a spicier version, use hot salsa or add diced jalapeños.
