Description

Delicious and healthy cauliflower tacos featuring roasted spiced cauliflower florets, topped with fresh red cabbage, avocado, cilantro, and queso fresco, served on warm corn tortillas. Perfect for a vegetarian Mexican-inspired main course that’s easy to prepare and full of flavor.

Ingredients

Scale

Cauliflower and Seasoning

  • 1 medium head cauliflower, cut into small florets
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Toppings and Assembly

  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro
  • ¼ cup crumbled queso fresco or vegan cheese
  • 1 lime, cut into wedges
  • Optional: sour cream or vegan crema for topping

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the cauliflower.
  2. Season Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, ground cumin, garlic powder, chili powder, salt, and black pepper until the florets are evenly coated with the spice mixture.
  3. Roast Cauliflower: Spread the seasoned cauliflower in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for 25 to 30 minutes, flipping the florets halfway through cooking. The cauliflower should be tender and have golden brown edges when done.
  4. Warm Tortillas: While the cauliflower roasts, warm the corn tortillas by heating them in a dry skillet or directly over a gas flame for a few seconds on each side until pliable and slightly charred.
  5. Assemble Tacos: Divide the roasted cauliflower evenly among the warmed tortillas. Top each with shredded red cabbage, sliced avocado, chopped cilantro, and crumbled queso fresco or vegan cheese. Squeeze fresh lime juice over the top and add a dollop of sour cream or vegan crema if desired.
  6. Serve: Serve the tacos immediately while warm, accompanied by lime wedges and optional hot sauce or jalapeños for added spice.

Notes

  • For added heat, sprinkle with hot sauce or add sliced jalapeños for a spicy kick.
  • Make this dish vegan by omitting the queso fresco and sour cream or choosing dairy-free alternatives.
  • Use fresh lime juice to brighten the flavors.
  • To save time, prepare the cauliflower seasoning mix ahead of time.
