- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup crumbled goat cheese or more mozzarella

Instructions
- Preheat and Prepare Egg Mixture: Preheat your oven to 375°F (190°C). In a large bowl, whisk together the eggs, whole milk or cream, salt, and black pepper until the mixture is smooth and fully combined.
- Sauté Vegetables: Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the halved cherry tomatoes and cook for 2 to 3 minutes until they soften slightly. Then stir in the chopped baby spinach and cook for an additional 1 to 2 minutes until wilted.
- Add Egg Mixture and Cheese: Pour the whisked egg mixture into the skillet with the sautéed vegetables. Gently stir to evenly distribute the tomatoes and spinach throughout the eggs. Sprinkle the shredded mozzarella, crumbled goat cheese (or additional mozzarella), and fresh basil evenly over the top.
- Cook on Stovetop and Transfer to Oven: Cook the frittata on the stovetop over medium heat for 2 to 3 minutes, allowing the edges to start setting. Then transfer the skillet to the preheated oven.
- Bake: Bake for 12 to 15 minutes until the frittata is puffed up, lightly golden on top, and the center is fully set and no longer jiggly.
- Cool and Serve: Remove the frittata from the oven and let it cool for 5 minutes before slicing. Drizzle with balsamic glaze if desired, and serve warm or at room temperature.
