- 6 andouille sausages, diced

- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 1 tablespoon Cajun seasoning
- Smoked paprika (for topping, to taste)
Instructions
- Cook Pasta and Sauté Sausage and Peppers: Bring a large pot of water to a boil and cook the elbow noodles according to package instructions until al dente. While the pasta cooks, heat olive oil in a skillet over medium heat. Add the diced red pepper and andouille sausage, sautéing until the sausage is browned and the peppers are tender, about 5-7 minutes.
- Prepare the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Stir in the flour and salt to create a roux and cook for about 1-2 minutes until lightly golden. Gradually whisk in the milk, continuing to stir until the sauce thickens, about 3-5 minutes. Reduce heat to low and stir in 4 cups of grated white cheddar cheese and the Cajun seasoning until the cheese melts and the sauce is smooth and creamy.
- Combine and Bake: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked pasta, sautéed peppers and sausage, and cheese sauce. Transfer the mixture to a greased casserole dish. Sprinkle additional cheese and a dusting of smoked paprika on top for extra flavor and color. Bake uncovered for 25-30 minutes until bubbly and golden on top.
