  • 1 cup finely chopped steamed broccoli

  • 2 large eggs

  • 1 clove garlic (minced)
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with olive oil spray.
  2. Mix Ingredients: In a large bowl, combine quinoa, broccoli, cheddar, Parmesan, eggs, breadcrumbs, garlic, onion powder, salt, and pepper. Mix well.
  3. Fill Muffin Cups: Scoop 1 tablespoon of mixture into each mini muffin cup, pressing down slightly.
