Ingredients
Scale
Cream Cheese Filling
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Blueberry Filling
- 1 cup fresh or frozen blueberries
- 1 tablespoon granulated sugar
Egg Rolls
- 8–10 egg roll wrappers
- Water for sealing edges
- Oil for frying (vegetable or canola)
- Powdered sugar for dusting (optional)
Instructions
- Prepare Cream Cheese Mixture: In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is completely smooth and creamy, ensuring no lumps remain.
- Sugar Blueberries: In a separate bowl, gently toss the fresh or frozen blueberries with granulated sugar until the berries are lightly coated to enhance their sweetness.
- Assemble Egg Rolls: Lay a single egg roll wrapper on a clean, flat surface with a corner pointed toward you. Spread about 1 tablespoon of the cream cheese mixture in a line across the center of the wrapper, then add a spoonful of the sugared blueberries on top of the cream cheese.
- Wrap Egg Rolls: Fold the bottom corner over the filling, tuck in the sides, and then roll tightly toward the top corner. Dab a little water on the top corner to seal the egg roll securely. Repeat with remaining wrappers and filling.
- Heat Oil: In a deep skillet or pot, heat 2 inches of vegetable or canola oil to 350°F (175°C), using a thermometer to ensure proper temperature for frying.
- Fry Egg Rolls: Fry the egg rolls in batches, cooking them for 2–3 minutes on each side or until they turn golden brown and crisp. Avoid overcrowding the pan to maintain oil temperature.
- Drain and Cool: Remove the fried egg rolls from oil and place them on paper towels to drain excess oil. Allow them to cool slightly to avoid burns when eating.
- Optional Dusting and Serving: Dust the warm egg rolls with powdered sugar before serving. For an extra indulgence, serve with whipped cream or a scoop of vanilla ice cream.
Notes
- You can substitute fresh blueberries with blueberry pie filling for convenience and consistent sweetness.
- These egg rolls are best enjoyed warm but can be reheated gently in an oven or air fryer to restore crispiness.
- Pair with whipped cream or vanilla ice cream to enhance the dessert experience.
