Ingredients
Scale
Spring Rolls
- 1/2 pound ground beef
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 1/2 cup shredded carrots
- 1/2 cup shredded cabbage
- 1/4 cup chopped green onions
- 8–10 spring roll wrappers or rice paper sheets
- fresh mint leaves
- fresh cilantro leaves
- cooked rice noodles (optional)
- warm water for softening wrappers
Peanut Lime Sauce
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1 clove garlic (minced)
- 2–3 tablespoons warm water (to thin)
Instructions
- Cook the Beef: In a skillet over medium heat, cook the ground beef until browned, about 5–6 minutes. Drain excess fat if needed, then add soy sauce, sesame oil, garlic, and ginger. Stir well to combine and cook for another 2–3 minutes. Remove from heat and let cool slightly.
- Prepare Wrappers: Soak the rice paper sheets in warm water one at a time until pliable, about 10–15 seconds, then lay each on a clean surface.
- Assemble Rolls: Place a small amount of the cooked beef mixture, shredded carrots, cabbage, green onions, and a few fresh mint and cilantro leaves in the center of each softened wrapper. Add a small handful of cooked rice noodles if desired.
- Roll the Spring Rolls: Fold the sides of the wrapper over the filling, then roll tightly from the bottom to seal the rolls. Repeat with remaining wrappers and filling.
- Make the Peanut Lime Sauce: Whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and warm water until smooth and creamy. Adjust consistency with more water if needed.
- Serve: Serve the spring rolls fresh with the peanut lime sauce for dipping.
Notes
- The beef mixture can be made a day ahead and chilled until ready to assemble.
- For a lighter option, substitute ground beef with ground turkey or a plant-based alternative.
- Spring rolls are best served fresh but can be stored covered in the fridge for up to 1 day.
