Description

This Beef Burrito Skillet One Pot Meal is a quick and satisfying dinner featuring seasoned ground beef, enchilada sauce, beans, corn, and tortilla strips all cooked together in a skillet. Topped with melted colby jack cheese and fresh scallions and cilantro, it’s a flavorful, easy-to-make meal perfect for busy weeknights.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 package taco seasoning mix
  • ½ cup water
  • 10 ounces red enchilada sauce
  • 15 ounces pinto beans, drained
  • 15 ounces corn, drained

Toppings & Extras

  • 6 flour tortillas
  • 1 cup shredded colby jack cheese
  • Scallions for topping
  • Cilantro for topping

Instructions

  1. Cook the beef: In a large skillet over medium-high heat, cook the ground beef for 7-8 minutes until no longer pink. Drain off any excess grease to keep the dish from becoming too oily.
  2. Add seasoning and sauce: To the cooked beef in the skillet, add the taco seasoning mix, water, red enchilada sauce, drained corn, and drained pinto beans. Stir to combine all ingredients evenly.
  3. Simmer the mixture: Cook the beef mixture for about 5 minutes, stirring occasionally, until the sauce thickens slightly, allowing the flavors to meld together.
  4. Prepare tortilla strips: While the beef mixture simmers, cut the flour tortillas into approximately 1-inch wide strips to be added into the skillet later.
  5. Add tortilla strips: Stir the tortilla strips into the skillet, making sure they are well coated with the sauce, which helps them soften and absorb flavor.
  6. Top with cheese: Sprinkle the shredded colby jack cheese evenly over the mixture. Let it sit for a minute or two to melt the cheese slightly.
  7. Serve with fresh toppings: Dish out the skillet meal onto plates and garnish with chopped scallions and cilantro for a fresh, vibrant finish and additional flavor.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • For a spicier kick, add a diced jalapeño or hot sauce before serving.
  • Use corn tortillas to make the meal gluten-free, or choose a gluten-free flour tortilla variety.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in a skillet or microwave.
