Description

This Beef & Zucchini Skillet is a quick and flavorful one-pan dinner that combines lean ground beef with tender zucchini, onions, and aromatic spices. It’s a satisfying low-carb meal that’s perfect for busy weeknights.

Ingredients

Scale

Ingredients:

  • 1 pound lean ground beef
  • 2 medium zucchinis (sliced into half-moons)
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil: In a large skillet over medium heat, heat olive oil.
  2. Cook onion and garlic: Add diced onion, cook for 2–3 minutes until softened, then add minced garlic and sauté for 30 seconds.
  3. Cook ground beef: Add the ground beef, break it apart with a spatula, and cook until browned. Drain excess fat if needed.
  4. Add zucchini and seasonings: Stir in zucchini slices, season with oregano, paprika, red pepper flakes (if using), salt, and black pepper.
  5. Cook: Cook for 5–7 minutes until zucchini is tender but not mushy, stirring occasionally.
  6. Finish: Sprinkle with Parmesan cheese if using, cook for an additional minute until melted. Garnish with fresh parsley and serve hot.

Notes

  • For extra flavor, consider adding a splash of tomato sauce or diced tomatoes while cooking.
  • This dish pairs well with rice, pasta, or cauliflower rice for a low-carb option.
