- 2 medium zucchinis (sliced into half-moons)

- 1/4 teaspoon crushed red pepper flakes (optional)

Instructions
- Heat olive oil: In a large skillet over medium heat, heat olive oil.
- Cook onion and garlic: Add diced onion, cook for 2–3 minutes until softened, then add minced garlic and sauté for 30 seconds.

- Add zucchini and seasonings: Stir in zucchini slices, season with oregano, paprika, red pepper flakes (if using), salt, and black pepper.
- Cook: Cook for 5–7 minutes until zucchini is tender but not mushy, stirring occasionally.
- Finish: Sprinkle with Parmesan cheese if using, cook for an additional minute until melted. Garnish with fresh parsley and serve hot.
