Apple Filling
- 2 medium apples (peeled, cored, and finely diced)
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch mixed with 1 tablespoon water
For Egg Rolls
- 8 egg roll wrappers
- Vegetable oil for frying (about 1 1/2 inches deep)

Instructions
- Prepare the apple filling: In a skillet over medium heat, melt the butter. Add the peeled, cored, and finely diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the apples are softened but still hold their shape. Stir in the cornstarch slurry (cornstarch mixed with water) and cook for another 1–2 minutes until the mixture thickens. Remove from heat and let cool slightly.
- Assemble the egg rolls: Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the apple mixture near the bottom corner. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edge with a bit of water to secure. Repeat with the remaining wrappers and filling.
- Heat the oil: In a deep skillet, heat about 1 1/2 inches of vegetable oil to 350°F (175°C). Use a thermometer to maintain the temperature to ensure even frying.
- Fry the egg rolls: Fry the egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy. Use tongs to carefully turn them for even cooking. Transfer the fried egg rolls to a paper towel–lined plate to drain excess oil.
- Serve: Dust the fried apple pie egg rolls with powdered sugar. Serve warm, optionally with caramel sauce and vanilla ice cream for a decadent treat.
Notes
- For a healthier alternative, bake the egg rolls by brushing them with melted butter and baking at 400°F (200°C) for 15–18 minutes, flipping halfway through.
- Air frying also works well; cook at 375°F (190°C) for 10–12 minutes until crispy.
- Make sure to not overfill the egg rolls to prevent them from bursting during frying.
- Use a thermometer to maintain oil temperature for best results and to avoid greasy egg rolls.
