Instructions

  1. Preheat Oven and Prepare Baking Sheet. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Sauté Vegetables. In a skillet over medium heat, heat the olive oil and sauté the finely chopped onion for 3 to 4 minutes until soft and translucent. Add the minced garlic and cook for an additional minute until fragrant.
  3. Cook Spinach. Stir in the roughly chopped spinach and cook until wilted, about 2 to 3 minutes. Season the mixture with salt, black pepper, and ground nutmeg to enhance the flavor. Remove from heat and let cool slightly to prevent scrambling the eggs in the next step.
  4. Mix Filling Ingredients. Transfer the spinach mixture to a mixing bowl and combine it with crumbled feta cheese, shredded mozzarella cheese, the lightly beaten egg, and chopped fresh dill or parsley. Stir well until evenly mixed to create a cohesive filling.
  5. Prepare Pastry. Roll out the thawed puff pastry sheets on a lightly floured surface to prevent sticking. Cut each sheet into 4 equal squares for a total of 8 squares.
