- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1 large egg, lightly beaten

Instructions
- Preheat Oven and Prepare Baking Sheet. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Sauté Vegetables. In a skillet over medium heat, heat the olive oil and sauté the finely chopped onion for 3 to 4 minutes until soft and translucent. Add the minced garlic and cook for an additional minute until fragrant.
- Cook Spinach. Stir in the roughly chopped spinach and cook until wilted, about 2 to 3 minutes. Season the mixture with salt, black pepper, and ground nutmeg to enhance the flavor. Remove from heat and let cool slightly to prevent scrambling the eggs in the next step.
- Mix Filling Ingredients. Transfer the spinach mixture to a mixing bowl and combine it with crumbled feta cheese, shredded mozzarella cheese, the lightly beaten egg, and chopped fresh dill or parsley. Stir well until evenly mixed to create a cohesive filling.
- Prepare Pastry. Roll out the thawed puff pastry sheets on a lightly floured surface to prevent sticking. Cut each sheet into 4 equal squares for a total of 8 squares.
- Assemble Pastries. Place a heaping tablespoon of the spinach filling in the center of each puff pastry square. Fold each square over to form triangles or rectangles, then press the edges firmly with a fork to seal the filling inside and prevent leaks during baking.
- Add Egg Wash and Optional Topping. Place the filled pastries on the prepared baking sheet. Brush their tops with the beaten egg to achieve a golden, glossy finish. Optionally, sprinkle with sesame seeds for added texture and visual appeal.
- Bake Pastries. Bake in the preheated oven for 18 to 22 minutes or until the pastries are golden brown, puffed, and cooked through.
- Cool and Serve. Remove the pastries from the oven and allow them to cool slightly on a wire rack before serving to let the filling set and avoid burns.

- You can prepare these pastries ahead of time and freeze them unbaked. When ready to bake, place straight from the freezer into the oven and add 3 to 5 minutes to the baking time.
